Lyme Bay Shoreline
A wine for seafood; well-balanced and refreshing with complex layers. This
beautiful wine has enticing notes of pineapple and lime with a crisp, saline finish.
The 2017 growing season was exceptionally early, with record temperatures for
bud break. This led to optimism for another early harvest & decent crop,
however, a late spring frost hit the country late April, which saw many vineyards
lose their most productive buds. The south of England was hit the worst, and
we were lucky to escape most of the damage. The remainder of the season
though was very kind & we harvested up to 3 weeks earlier in comparison to
2015 & 2016. Ripeness levels were good & exceptional in some vineyards.
The Shoreline is a blend of Bacchus, Pinot Blanc & Seyval Blanc, with each of the
parcels fermented separately with different yeast strains & temperatures to
make several complex layers of flavours and aromas. Upon completion, the
different vats were assessed for potential and characteristics, then blended
together in the optimum proportions. The resulting Shoreline blend was aged
for four months on fine lees to improve structure & mouth-feel, before being
bottled at the end of February 2018 to preserve its freshness.
Clear, very pale lemon in colour.
Clean, fresh lemon and lime, with some tropical pineapple and pear notes.
Dry with a crisp, saline finish. The palate’s fresh acidity displays lemon and
grapefruit. An excellent match for seafood dishes.
